This recipe is a slight variation on the one we discovered online called, To Die For Blueberry Muffins. We were searching for a recipe (or something close to it), of one of our favourite muffins we often buy at our local coffee shop - the fruit explosion muffin. The fruit explosion muffin contained various fruits and although this recipe is a blueberry muffin recipe, it looked promising, so we gave it a try.

Easy SPAGHETTI BOLOGNESE
This homemade recipe we've been making for years and was handed down to us by... someone. Adding smoked bacon is what gives it the (I'm doing the Italian kiss-fingertips-and-toss-away gesture), wonderful flavour! We sprinkled a bit of shredded mozzarella cheese on top for extra goodness!

Video: How to Roll a Croissant
Believe it or not, a lot of people (including ourselves), really don't know how to roll a dough into a croissant shape. Remember those Pillsbury Crescent rolls? We could never get those things looking right.
Perhaps this simple video below (no words required), will finally help us to do so - especially when making your own from scratch because, yes, it's really that easy to roll.

CANADIAN-style, JAMAICAN FISH Fritters (A Super Bowl Treat)
Usually on Super Bowl weekends, pizza, wings... and beer are in order. But if you really want something different, tasty AND goes great with beer, this is the recipe for you.
Although this is something Jamaicans usually eat for breakfast, you can eat it any time of the day. Now, I say Canadian-style because usually Jamaicans use cod-fish - I'm using Pollock. This was cheaper, readily available in stores here and almost, if not, just as tasty as the cod version. Also, Jamaicans would add some scotch bonnet pepper to the recipe - I added none. But you can add whatever pepper you want!
Ingredients:
- 400 g of SALTED FISH
- 2-cups of FLOUR
- 4-1/2 cups of WATER (reserve 1-1/2 cups for later)
- 1- large TOMATO (chopped up)
- 2-3 stalks of GREEN ONIONS (chopped up)
- 2-tsp of BAKING POWDER
- 1-tsp of ground BLACK PEPPER
- 1/2 cup of CANOLA OIL
Instructions:
- Cut up the salted fish into pieces using a pair of scissors.
- Fill pot with enough water to cover the fish, about 3 cups.
- Cover pot and bring to a boil. Continue boiling for another 5 mins. (Be sure to keep an eye on it since it's salted water - it will boil quickly)
- Pour boiled fish into a strainer and rinse under cold water. (If you prefer a less-saltier tasting fritter, re-boil fish again).
- Break up fish into smaller pieces by rubbing them together. (As shown in vide around the 2:47 mark). Set aside.
- Chop up your tomato and green onions.
- Combine everything in a bowl.
- Add flour, baking powder and black pepper to the fish mixture. Stir everything together well.
- Add the reserved water to the mixture - or just enough to blend all the ingredients together.
- Add enough oil to a frying pan to cover the bottom of a frying pan (about 1/2 cup), and heat over medium heat until hot.
- Drop fritter batter in by the spoonful - as big or small as you want. Fry each side until they appear a nice golden brown in colour, drain excess oil on paper towel - and enjoy!
Tip: To turn these fritters into an appetizer, just make them into bite-size pieces!
